Marinating Venison Meat

Good for mature meat. Marinating venison is great for flavoring the meat, but it serves a practical purpose too. If you know you have a gamey piece of meat (for example, it came from a mature buck), marinating it can get rid of some of that gamey taste. Rinsing and marinating the meat in vinegar (apple cider, wine, whatever you like) for a few hours or marinating it in buttermilk overnight are especially effective techniques. Don’t marinate it longer than 24 hours, though, because the meat will get mushy. If I’m making skewers or kabobs, I marinate the meat anywhere from 30 minutes to 2 hours, no more. Be sure to refrigerate the meat while you’re marinating it.
