Cheesy Venison Burger

Friday night is usually venison burger night for us. There are a ton of ways to cook venison burgers, and I’m always experimenting with more. Tonight I thought I’d try mixing mozzarella cheese with the ground venison to see if it would help with keeping the meat from falling apart on the grill. It did. And the burgers were moist, even though we cooked them well done. Perfect!

Cheesy Venison Burger with Oats

Recipe: Cheesy Venison Burger

Summary: a moist and filling burger with a little kick.

Ingredients

  • 1 lb ground venison
  • ¾ cup shredded mozzarella cheese
  • ½ cup chopped green pepper
  • ¼ cup oat bran
  • 1 tsp salt
  • ¼ tsp cayenne pepper oil
  • BBQ sauce tomato

Instructions

  1. Preheat grill.
  2. Mix together all ingredients, except the oil, BBQ sauce, and tomato and form into six patties.
  3. Brush each patty with the oil so that it won’t stick to the grill.
  4. Grill burgers for about 5 minutes on each side, or until cooked through. The cheese keeps these moist, so well done is good for them.
  5. Remove from grill and serve with a dollop of BBQ sauce and a slice of tomato.

Variations

You can use finely chopped bread crumbs instead of the oat bran.

Oaty Venison Burger

Adding oats to ground venison adds a wonderful flavor and texture, as well as making the meat go a little further and helping the meat stay together on the grill.

Recipe: Oaty Venison Burger

Ingredients

  • 1 pound ground venison
  • 2 tablespoons steak sauce
  • 1 tablespoon honey
  • ¼ cup quick oats, uncooked

Instructions

  1. Heat grill to 325°.
  2. Mix ingredients together in large bowl. Form into 4 or 5 patties.
  3. Spray grill with non-stick cooking spray.
  4. Cook on for 4 minutes per side, or until the burgers are cooked to your liking.
  5. Baste with Steak Sauce while cooking.

Cooking time (duration): 10

Number of servings (yield): 6

Basic Venison Burger

Nothing beats a burger. The trick to a good, basic venison burger it to add some sort of fat to it so that it retains some juice when cooked (and so that it doesn’t fall apart on the grill). This is the basic recipe we use when we just want a good old plain burger. This is also great for introducing people to venison; we made a ton for a Labor Day picnic and the kids devoured them!

  • 1 lb ground venison
  • 1 to 2 tbs oil (canola, peanut, or whatever you like)
  • 1 tsp Worcester sauce
  • salt and pepper to taste
  • non-stick spray

Instructions

  1. Heat grill or broiler.
  2. Mix all ingredients together, except the non-stick spray.
  3. For meat into four patties.
  4. If grilling, spray the grill with non-stick spray.
  5. Cook patties about 4 minutes per side (depending on how you like them).

Quick Notes

Be careful grilling; venison burgers like to fall apart, even when you put fat in them. They will stay together if you make sure you don’t flip them too soon. Better to cook them longer at a lower temperature to give them time to stick.
