Everything tastes better with bacon. That is just an indisputable truth. Venison burgers are no exception. However, I’ve never really been a fan of putting pieces of bacon on a burger. I don’t know why this is when I love bacon so much, but I’ve stopped wondering why I do or don’t like certain things.
But what about using bacon as the vehicle for the venison burger? There’s a thought. I’d like to take credit for dreaming up the thought, but we can thank YouTube for that. My nephew (who spends ALL of his free time watching YouTube videos) told me about one where the person used bacon to make plates. Very interesting. Then as I was surfing recipes, I came across a recipe on Your Lighter Side, a site dedicated to low carb eating and featuring bacon prominently.
There are endless combinations for the ground venison stuffing for these bacon baskets. The one posted here is what is pictured. Some fun alternatives would be the BBQ Venison burger, the spicy venison burger, or the zesty horseradish venison burger. I’m making myself hungry just thinking about these venison burgers!

Ingredients
- Applewood smoked bacon (2 to 3 lbs)
- 1 lb ground venison
- 1/4 cup onion, diced
- 1 egg
- 1/2 cup fresh cilantro, chopped coarsely
- 1 tsp cumin
- 1/2 tsp kosher salt
- 1/2 tsp fresh ground black pepper
Instructions
- Preheat the oven to 400°.
- The idea with the bacon is that your making cups. Invert a cookie sheet and place two slice of back over the bottom (you may need to trim the bacon a bit, depending on low large and/or fatty your bacon slices are…the bacon I use is thick and not too fatty, so it doesn’t shrink much when it cooks). Wrap a third piece of bacon around the cup. Repeat on all twelve cups.
- Place in the oven and bake until cooked through. In my oven, this is about 20 minutes.
- Remove and let the cups cool. You can make these up to a day in advance.
- While the bacon cups are cooling, mix the remaining ingredients together in a mixing bowl.
- Preheat the oven to 350°.
- Remove the bacon cups from the cupcake pan and place on a cookie sheet.
- Fill each cup with the ground venison mixture.
- Place in oven and bake until cooked through, about 30 minutes.
- Remove from oven and let sit for a few minutes before serving.
Preparation time: 15 minute(s)
Cooking time: 20 minutes for baskets, 30 minute for burgers
