Good for mature meat. Marinating venison is great for flavoring the meat, but it serves a practical purpose too. If you know you have a gamey piece of meat (for example, it came from a mature buck), marinating it can get rid of some of that gamey taste. Rinsing and marinating the meat in vinegar (apple cider, wine, whatever you like) for a few hours or marinating it in buttermilk overnight are especially effective techniques. Donâ€™t marinate it longer than 24 hours, though, because the meat will get mushy. If Iâ€™m making skewers or kabobs, I marinate the meat anywhere from 30 minutes to 2 hours, no more. Be sure to refrigerate the meat while youâ€™re marinating it.
